Ingredients for 12 servings:

  • 1 kg apples, peeled and diced
  • 1 lemon(s), the juice
  • n. B. sugar
  • 1 bag of vanilla sugar
  • some schnapps (apple schnapps)
  • ½ can condensed milk, sweetened
  • 500 g curd cheese, 20%
  • e.g. cream
  • 1 bag of vanilla sugar
  • 4 tbsp sugar, add to taste
  • 12 biscuits (Amarettini)
  • ½ can condensed milk, sweetened

Instructions

Working time approx. 45 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 15 minutes; Total time approx. 5 hours

Compote: Pour the lemon juice into a saucepan, toss the diced apples in it immediately to prevent them from tarnishing. Add the remaining ingredients and bring to a boil. Stir frequently and, if it becomes too dry, add a little more apple schnapps. The compote should be firm. It’s best to add sugar gradually to prevent it from becoming too sweet. Let it cool, mash any large pieces with a fork or potato masher, and stir in 2 tablespoons of apple schnapps. Pour the cooled compote into serving glasses. This will make enough for about 12 small molds. Place 1 amaretti biscuit in each glass and drizzle with about 1 tablespoon of sweetened condensed milk. Cream: Mix all ingredients, using the remaining condensed milk. If there’s not enough, add a little more cream. Add sugar to taste; the condensed milk already adds a bit of sweetness. Spread the cream over the apple compote and let it sit in the refrigerator for a few hours. The compote can be prepared a few days before use, and the cream the day before.
