Ingredients for 6 servings:
- 150 ml lemon juice
- 50 ml passion fruit juice
- 250 g sugar
- 1 egg yolk
- 1 tbsp cornstarch
- 50 ml water
- 2 lemons, untreated, juice
- 1 vanilla pod(s), including the pulp
- 200 ml cream
- 1 pack of cream stiffener
- 600 g yogurt, Greek or 1.5% fat
- 25 ladyfingers
- Chocolate shavings
Instructions
Working time approx. 30 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 5 minutes; Total time approx. 5 hours 35 minutes
Bring the passion fruit juice to a boil with the lemon juice and 100g of sugar. Whisk the cornstarch with 50ml of water and the egg yolk. Stir continuously into the juice, allow to thicken, and let the lemon sauce cool. Then mix 150g of sugar with the zest of 2 lemons and the seeds of 1 vanilla pod. Whisk with the cream and cream stabilizer until stiff peaks form. Then fold in the yogurt and 2 tablespoons of citric acid. If you want to reduce the fat in the recipe, you can use low-fat yogurt. Finally, layer the finished cream in a dish, alternating with the sauce and sponge fingers. If desired, garnish the tiramisu with grated chocolate. It’s also delicious to replace the passion fruit juice with mango juice, for example, from a can of mango. Fold the well-drained mango flesh into small cubes and fold it into the yogurt mixture. Then layer it in the dish.
