Polish-style potato salad

Ingredients for 4 servings:

  • 600 g potatoes, waxy
  • 300 g carrot(s)
  • 150 g celeriac
  • 150 g parsnip(s)
  • 300 g gherkins
  • 300 g peas
  • 300 g apples
  • 6 eggs, hard-boiled
  • 2 jars of mayonnaise, 250 ml each
  • some cucumber juice
  • 1 tsp mustard, medium hot
  • e.g. salt and pepper

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Vegetarian

Peel the potatoes, carrots, celery, and parsnips, cook until tender, and let cool. Cook the eggs and let cool. Then chop all ingredients very finely (max. 1 cm) and mix together. Add a generous amount of the cucumber juice collected through a sieve to allow the ingredients to mix easily. Add the mayonnaise, medium-hot mustard, salt, and pepper, and let everything sit until well chilled.
