Curry meatloaf with olives

Ingredients for 4 servings:

  • 5 tbsp breadcrumbs
  • 125 ml cream
  • Salt
  • 1 small bell pepper(s), red
  • 4 tbsp olives, black
  • 1 bunch of spring onions
  • 500 g minced meat, mixed
  • 1 tbsp flour
  • 2 tsp herbs de Provence
  • 1 egg(s)
  • 1 tbsp curry
  • 150 g cheese (Gouda cheese in one piece)
  • 750 g potatoes
  • Nutmeg, grated
  • Butter, for greasing

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Pour 3 tablespoons of cream over the breadcrumbs. Finely chop the bell pepper, olives, and onions, mix with the minced meat, flour, 1 teaspoon of herbs, egg, and 1 tablespoon of curry powder, and season with salt. Cut the cheese into thick sticks, peel the potatoes, and slice them thinly. Form the meat mixture into an oval loaf, place it in a buttered dish, sprinkle with the remaining herbs, and surround with potatoes. Press the cheese into the meat. Mix the remaining cream with nutmeg and salt and pour over the potatoes. Roast at 200°C (gas mark 3) for about 1 hour.
