Ingredients for 2 servings:
- 300 g chicken breast fillet(s)
- 1 red bell pepper(s)
- 1 bell pepper(s), yellow
- 250 g mushrooms
- some leek
- 250 ml Diet Coke
- 200 g ketchup, hot

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Cut the meat into bite-sized pieces, wash and chop the vegetables. Mix Diet Coke with ketchup. Place the chicken in a pan, pour over the sauce, and cook over medium heat. After about 10 minutes, add the vegetables and mushrooms, and cook for another 20 minutes until the sauce thickens. The chicken will be super tender. I recommend rice as a side dish.
