Green bean salad

Ingredients for 2 servings:

  • 500 g beans, frozen (e.g. green beans)
  • 1 tbsp white wine vinegar
  • 4 tbsp olive oil
  • 1 tbsp mustard, e.g. fig mustard
  • 1 tsp capers
  • 1 garlic clove(s)
  • 1 spring onion(s)
  • 2 m.-large tomato(s)
  • salt and pepper
  • 1 salad, e.g. lettuce

Working time approx. 15 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 23 minutes

is quick and tasty and spicy

Bring a little salted water to a boil in a pot, add the frozen beans, and cover. Cook until tender, covering the pot, for 6-8 minutes. Meanwhile, combine the mustard, vinegar, oil, salt, and pepper to make a dressing. Finely chop the spring onion, lettuce leaves, garlic, and capers, and stir in. Wash the tomatoes, cut them into small pieces, and add them. Drain the beans and mix them with the other ingredients while they’re still warm. Serve with pan-fried food and baked potatoes, or simply with a slice of fresh bread. The salad tastes best lukewarm; it loses some of its flavor in the refrigerator.
