Low-histamine spelt pancakes without eggs

Ingredients for 3 servings:

  • 375 g spelt flour type 630
  • ½ pack of baking powder
  • 3 tbsp sugar, less or more to taste
  • ½ tsp salt
  • 400 ml milk
  • 2 tbsp oil
  • 150 ml carbonated mineral water
  • some oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Mix together the spelt flour, baking powder, sugar, and salt. Add the milk and oil and mix with a hand mixer. Add the mineral water and stir slowly until a smooth batter has formed. Heat a little oil in a pan over medium heat and add a little of the batter to the pan. To make the pancakes nice and thin, spread the batter lightly in the pan. If it is still too firm, add a little more mineral water. Turn over for the first time after just a short time, then turn over several times until both sides are golden yellow and crispy. Tastes delicious served warm with, for example, homemade blueberry jam.
