Westphalian Puff Pastries

Spread the love

Ingredients for 2 servings:

  • 250 g flour
  • 300 ml milk (approximate: the dough should be quite liquid)
  • 2 tsp baking powder
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 egg(s)
  • Oil, for frying
  • Fruit, sausage or cheese to bake as desired

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sift the flour and baking powder into a bowl, add the sugar and salt, and mix with the egg and milk to form a fairly runny batter (like pancakes). If you like, cut fruit into wedges, or sausage/cheese into strips, which you can bake in later; however, the pancakes are also delicious on their own! If you bake in sausage or cheese, you should only use 1 tablespoon of sugar, otherwise the batter will be too sweet. Heat a little oil in a pan and fry small pancakes over medium heat. If you want to bake in fruit, etc., place it immediately into the batter and press down lightly. When the batter is no longer runny, turn the pancakes over and finish cooking on the other side.
