Couscous with chicken curry

Ingredients for 5 servings:

  • 500 ml vegetable stock
  • 250 g couscous
  • 1 mango(s)
  • 1 can peach(s)
  • 1.2 kg chicken breast
  • 1 chili pepper(s), red
  • 2 onions
  • 3 garlic cloves
  • 250 ml cream
  • oil
  • salt and pepper
  • curry powder
  • Paprika powder, sweet

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Bring the vegetable stock to a boil. Pour into the couscous, stir, and let it simmer for about 10 minutes. Cut the chicken breast into strips. Peel and deseed the mango, and roughly dice it. Peel and finely dice the onions and garlic. Dice the peaches. Heat oil in a pan. Fry the onions and garlic. Add the chicken breast strips and season with salt, pepper, curry powder, and paprika. Wash the chili pepper, remove the seeds if desired, and finely dice it. Add to the pan. Add the mango and peach cubes to the pan and season with curry powder if desired. Top up with cream and simmer for about 5 minutes.
