Mom's carrot salad with garlic

Ingredients for 2 servings:

  • 5 large carrots
  • 1 small garlic clove(s), squeezed
  • 2 tbsp yogurt
  • 3 tbsp cream
  • 1 tbsp linseed oil or walnut oil
  • 1 tbsp olive oil
  • 2 tbsp vinegar
  • 1 tbsp dill, chopped
  • e.g. sea salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine all ingredients except the carrots in a bowl and stir well. Peel the carrots, trim the ends, and roughly chop them, then chop them in a food processor until they’re about the size of a grain of rice. You can, of course, finely grate the carrots, but we’ve found they taste better chopped. Add the carrots to the bowl with the dressing and toss the salad well. Season with sea salt, if desired. We eat this salad with roast chicken and fried fish, or simply as a snack.
