Tarte flambée with sweet potatoes and red onions

Ingredients for 2 servings:

  • 1 package of tarte flambée dough (refrigerated shelf)
  • 250 g crème fraîche, 30% fat
  • ½ organic lemon(s), zest and juice
  • salt and pepper
  • 1 onion(s), red
  • 100 g sheep’s cheese
  • 1 sweet potato(s)
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 4 tbsp, heaped wild cranberries (jar) or cranberries

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Preheat the oven to 200°C fan/convection oven. Pour the crème fraîche into a bowl and mix with the lemon juice, lemon zest, salt, and pepper. Then spread it evenly over the tarte flambée dough, which has been rolled out on a baking sheet. Peel the onion and slice into rings. Peel the sweet potato and cut into approximately 2 mm thick slices. In a bowl, toss the onion rings and sweet potato slices with oil, honey, pepper, and salt, then top the dough with the mixture. Finally, scatter the diced feta cheese and small dots of wild cranberries over the top. Bake in the hot oven for about 15 minutes, then enjoy with your favorite red wine.
