Kale quiche

Ingredients for 4 servings:

  • 250 g flour
  • 125 g butter, soft
  • 2 tbsp water
  • 1 pinch of salt
  • 200 g kale, frozen
  • 2 onions, red
  • Salt and pepper, black
  • 150 g Cheddar cheese, grated
  • 120 g walnuts, chopped
  • 3 eggs
  • 200 ml sweet cream
  • 100 ml milk
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Make a shortcrust pastry from the flour, butter, water, and salt and place it in a greased 24 cm springform pan. Bake the pastry “blind” in a preheated oven at 200°C for about 10 minutes. Chop the onion and fold it into the thawed kale. Season with salt and pepper. Fold the grated Cheddar cheese and chopped walnuts into the kale and spread everything on top of the pre-baked quiche dough. For the topping, whisk together the eggs, cream, and milk and pour over the quiche. Return the quiche to the oven and bake for about 30 minutes until golden brown. Tip: Spinach works perfectly instead of kale.
