Mussels for beginners

Ingredients for 2 servings:

  • 1 ½ kg mussels
  • 1 can of tomatoes, peeled
  • 3 onions
  • 3 garlic cloves
  • 4 bay leaves
  • 1 shot of dry red wine
  • salt and pepper
  • olive oil

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Wash the mussels, remove the beards, or buy cleaned mussels straight away. Remove any damaged mussels. Heat a large pot of water. Add the mussels to the boiling water, making sure they are slightly covered. Cook with the lid on for 15-20 minutes, until the mussels have opened. Discard any closed mussels. Drain most of the water. Meanwhile, heat olive oil in a pan and sauté the diced onions. Add the very finely diced garlic and sauté briefly. Add the finely chopped tomatoes and bay leaves, and simmer for 10 minutes. Add a generous splash of red wine and season with salt and pepper. Add the tomato sauce to the mussels, stir gently, and simmer, covered, for about 10 minutes. Stir the mussels in their liquid frequently. Baguette and red wine go well with this.
