Ingredients for 4 servings:

  • 250 g cherry tomatoes
  • 1 bunch of spring onions
  • 10 cloves garlic
  • 2 red chili peppers
  • 500 ml dry white wine
  • 200 ml vermouth (Martini bianco)
  • 10 ml olive oil
  • oregano
  • 800 g scampi, without shell

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine the white wine, martini sauce, and olive oil in a pan with the finely chopped vegetables and garlic. Simmer for at least 1 hour, until the broth thickens. Finally, let the scampi simmer in the broth for about 5 minutes. Serve with baguette or pasta.
