Vegetable sauce with green tomatoes

Ingredients for 1 servings:

  • 1 ½ kg tomatoes, green
  • 500 g onion(s)
  • 2 tbsp salt
  • 125 g date(s), pitted, chopped
  • 375 ml vinegar (wine vinegar)
  • 500 g sugar
  • 1 tbsp flour
  • 3 tbsp mustard
  • ½ tbsp curry powder
  • 1 tsp cayenne pepper
  • 1 tsp turmeric
  • 1 tsp ginger powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Use for green tomatoes that no longer ripen properly

Finely chop the tomatoes and onions, sprinkle with salt, and let stand overnight. Squeeze the vegetables the next day. Add the dates, vinegar, and sugar, bring the mixture to a boil, and simmer for 45 minutes. Mix in the flour and all the spices and let it cook for the last 10 minutes. Immediately pour the finished sauce into jars, seal the jars, and let stand upside down for 5 minutes. It goes very well with snacks and meat. Just give it a try! And a great way to use up those green tomatoes on the vine at the end of the tomato season.
