Apple red cabbage

Ingredients for 4 servings:

  • 1 small red cabbage, cleaned, cut into strips
  • 2 medium-sized apples, sour, peeled, diced
  • 1 medium-sized onion(s), diced
  • 2 tbsp goose fat or pork fat
  • 3 tbsp vinegar (preferably apple cider vinegar)
  • ¼ liter apple juice
  • 2 cloves
  • 1 bay leaf
  • salt and pepper
  • 1 tbsp sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat the lard in a saucepan and sauté the diced onion and apple. Add the red cabbage and stir in the vinegar, then the apple juice. Now add the cloves and bay leaf and season with salt, pepper, and sugar. Cover and simmer over medium heat for about 50 minutes, stirring occasionally. Add a little more liquid if necessary. Goes well with roulades or roast pork.
