Green tomato chutney

Ingredients for 1 servings:

  • 1 ½ kg tomatoes, green
  • 750 g onion(s)
  • 1 kg apples, green (e.g. Granny Smith)
  • 150 g raisins, seedless
  • 250 g celery
  • 3 bulbs of ginger, in syrup
  • 200 g brown sugar
  • 1 tbsp salt
  • 375 ml vinegar (wine vinegar)

makes about 8 jars of 1/4 l each

Use green, unblemished tomatoes (larger than 3 cm) and remove the blossoms, wipe dry, and cut into approximately 1/2 cm cubes. Dice the peeled and cored apples, onions, and celery. Place the tomatoes in a large saucepan along with the raisins, finely chopped ginger, and the remaining ingredients and simmer over low heat until thickened. Don’t forget to stir frequently, especially to prevent burning. Pour the chutney into the jars while still piping hot and seal immediately. It tastes great with grilled meat, steaks, fish, and liver.
