Chocolate Scones – Giant Cookie

Ingredients for 1 servings:

  • 125 g spelt flour, light
  • 100 g wholemeal spelt flour
  • 50 g raw cane sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp vanilla
  • 80 g butter
  • 125 g yogurt
  • 50 g dark chocolate
  • 30 g raisins
  • e.g. butter, liquid
  • powdered sugar
  • Flour for the work surface

Working time approx. 20 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 38 minutes

Preheat the oven to 200 degrees Celsius (top/bottom heat). Line a baking sheet with parchment paper. Combine the flours, sugar, baking powder, salt, and vanilla in a bowl. Add the butter in pieces and rub it into the flour. Add the yogurt and quickly mix to form a dough. Finely chop the dark chocolate and fold it in with the raisins. Flatten or roll out the dough on a floured surface into a round loaf about 22 cm in diameter. Place on the baking sheet and cut into eight pieces. Pull the pieces apart slightly to prevent them from sticking together. Brush the scones with melted butter and bake in the preheated oven on the middle rack for about 18-20 minutes. Remove from the oven and dust with powdered sugar before serving. Note: Since we love classic scones, this time I made them in a delicious giant cookie with chocolate chips. My two little kitchen helpers prove that making scones is child’s play. With spelt flour and a low sugar content, this delicious pastry is also practically healthy. Serves 8.
