Low-fat pumpkin bread

Ingredients for 1 servings:

  • 350 g pumpkin flesh
  • 700 g flour
  • 2 packets of dry yeast
  • 2 tsp sugar
  • 3 tsp salt
  • 500 ml water, lukewarm

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 30 minutes

Hollow out the pumpkin; we only need the flesh for the bread. Combine all ingredients in a mixing bowl and mix thoroughly with a hand mixer. Let the batter rest in a warm place for 1 hour. Line a cake pan (loaf pan) with baking paper and pour in the batter. Bake at 200°C (fan oven) on the lowest rack for about 60 minutes. You could also add pumpkin seeds. But I didn’t, as I’m on a low-fat diet. The whole loaf has only 8 grams of fat.
