Black radish patties

Ingredients for 4 servings:

  • 400 g black radish(s)
  • 500 g potatoes
  • 2 m.-sized eggs
  • 1 stale roll
  • e.g. breadcrumbs
  • 1 bunch parsley, chopped
  • 1 cup fat or oil for frying
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

vegetarian and delicious

Soak the bread roll in warm water. Peel and grate the radish and potatoes. Mix the eggs and the squeezed bread roll into the vegetables. Season with pepper, salt, and nutmeg, and add the parsley. If necessary, add a few more breadcrumbs to help the patties form well. Heat the fat in a pan, then fry the patties over medium heat for about 5 minutes on each side until golden brown. Drain well and pat dry with kitchen paper. Tip: The first patties can be kept warm in the oven at 50°C until the last ones are ready. A mixed salad goes very well with this dish.
