Savoy cabbage stew with meatballs and garlic quark

Ingredients for 4 servings:

  • 1 head of savoy cabbage (about 1 kg)
  • 500 g potatoes
  • 4 carrots
  • ½ liter beef broth
  • 8 sausages (fresh bratwurst)
  • 500 g quark, low-fat
  • 400 g sour cream
  • 2 garlic cloves
  • salt and pepper
  • Parsley

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Clean the savoy cabbage, quarter it, and cut it into small pieces. Cut the potatoes into thumb-thick cubes and the carrots into slices. Layer everything with the savoy cabbage in a pot, pour in the stock, bring to a boil, and simmer covered for 30 minutes. Carefully toss the vegetables and season with salt and pepper. Cut open the sausages and form the meatballs into small dumplings. Place the dumplings on the vegetables and simmer covered for another 12 minutes. Mix the quark and sour cream, adding a little milk if desired. Season with the crushed garlic cloves (or plenty of garlic spice), salt and pepper, and stir in the parsley. Arrange the savoy cabbage on a plate with the meatballs and garlic quark.
