Pasta with quince sauce

Ingredients for 4 servings:

  • 500 g mixed mushrooms, roughly chopped
  • Butter, for frying
  • 1 onion(s), finely chopped
  • 1 clove(s) garlic, squeezed
  • 1 quince(s), diced
  • 4 dl vegetable broth
  • Cayenne pepper
  • Salt
  • pepper
  • 500 g pasta

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Brown the mushrooms in batches in a frying pan in the hot butter, then remove. Reduce heat, adding a little butter if necessary. Sauté the onion, garlic, and quince cubes in the pan for about 5 minutes. Add the stock, bring to a boil, reduce heat, and add the mushrooms. Cover and simmer the sauce for about 25 minutes. Season and serve with the cooked pasta. Tip: Use about 300g of pumpkin instead of quince.
