Quinoa patties

Ingredients for 2 servings:

  • 200g quinoa
  • 2 carrots
  • 1 shallot(s)
  • 1 garlic clove(s)
  • 1 handful of parsley
  • 50 g Gouda, grated
  • 2 eggs
  • breadcrumbs
  • 1 ball of mozzarella

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

First, cook the quinoa. Place it in a sieve and rinse thoroughly with lukewarm water to remove any bitter flavors. Then place it in a saucepan with 400 ml of water, add a little salt, cover, and heat. Once it boils, reduce the heat and simmer gently for about 15 minutes, until the quinoa is still slightly firm to the bite. If there is still some water left in the pan, drain the quinoa again in a sieve and let it cool. In the meantime, either grate or finely dice the carrots, finely dice the shallot and garlic, and briefly sauté everything together in a little olive oil, then let it cool immediately. Dice the mozzarella. Once the quinoa has cooled slightly, combine it with the vegetables, chopped parsley, cheese, and eggs, and season with salt and pepper. Bind everything together with breadcrumbs; the mixture should be moist but not wet, otherwise it will easily fall apart during frying. Form portions of patties with your hands, place 2-3 mozzarella cubes in the center of each, cover the patties, gently flatten, and fry in olive oil over medium heat until golden brown.
