Pork fillet wrapped in bacon with oven-baked vegetables and a honey-mustard sauce

Ingredients for 4 servings:

  • 500 g pork fillet(s)
  • 10 slices of bacon
  • salt and pepper
  • Paprika powder
  • 4 carrots
  • 1 parsnip(s) or sweet potato
  • 4 potatoes
  • olive oil
  • 3 tbsp honey
  • Balsamic vinegar
  • Fresh herbs, e.g. rosemary, thyme
  • salt and pepper
  • 2 tbsp mustard
  • 200 g cream
  • 2 tsp lemon juice

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 30 minutes

Trim the fillet and season with salt, pepper, and paprika. Wrap in bacon slices. Sear briefly on all sides in a pan. Cook in the oven at 190°C (fan oven) for about 20 minutes. For the oven-baked vegetables, peel the vegetables and potatoes and cut into equal-sized pieces. Chop the herbs. Mix everything in a bowl with olive oil, honey, balsamic vinegar, herbs, salt, and pepper. Place on a baking tray and bake at 190°C (fan oven) for about 25-30 minutes, until everything is soft and lightly caramelized. For the honey and mustard sauce, briefly heat the honey and mustard in a small pan or saucepan. Add the cream and season with a little lemon juice. Simmer on low heat until the sauce has a nice consistency.
