Ingredients for 2 servings:

  • 1 cup basmati
  • 1 cup vegetable broth
  • 1 can coconut milk
  • 1 tbsp curry paste, red
  • 1 onion(s), chopped
  • some oil (e.g. peanut oil)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

super quick and delicious rice dish

Heat the oil in a wok or pan. Add the chopped onion and curry paste. Sauté for 2-3 minutes until translucent, or fry the paste. Then add the rice and sauté briefly in the pan. Then pour in the vegetable stock and coconut milk and cook the rice until tender. Stir frequently. You can vary this with all sorts of ingredients, for example, adding vegetables or pineapple. A green salad goes very well with this dish.
