Ingredients for 1 servings:

  • 3 large cauliflower florets, cooked
  • 1 stalk(s) celery
  • 1 small pak choi, mini
  • 1 handful of radicchio
  • 2 slice(s) smoked bacon
  • 2 large eggs
  • 70 g goat’s cheese or cow’s milk cheese
  • 50 g mozzarella, grated or vegan pizza cheese
  • 1 tbsp chia seeds
  • 1 tbsp butter
  • 2 tbsp coconut oil or olive oil
  • some pepper or chili
  • some salt (Society Garlic Salt) or Himalayan salt
  • possibly herbs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Use up leftovers, with cauliflower, ideal in the evening, also vegetarian

Add the butter and oil to a pan. Do not turn on the heat until all the vegetables are in the pan. Dice the bacon and spread it in the pan. Cut the cooked cauliflower florets (any leftovers), celery, bok choy, and radicchio into small pieces and spread them evenly over the bacon. Now turn on the heat and fry everything briefly. In the meantime, in a bowl, use a fork or a blender to mix the eggs with the cream cheese, chia seeds, spices, and grated cheese. Carefully and evenly spread everything over the vegetables in the pan and cook halfway through, then reduce the heat to medium. Break it into large pieces and turn them over with a slotted spoon. Let it set and brown a little more. Vegetarians can simply omit the bacon.
