Chocolate diamonds with pistachios

Ingredients for 1 servings:

  • 200 g dark chocolate or dark chocolate coating
  • 250 g butter
  • 6 eggs
  • 100 g sugar
  • 100 g honey
  • 100 g hazelnuts, ground
  • 100 g flour
  • 25 g pistachios, chopped
  • 2 tbsp orange liqueur (optional)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Preheat oven to 150°C fan/convection oven. Break chocolate into pieces and melt with the butter in a double boiler. Meanwhile, beat eggs, sugar, and honey until fluffy. Stir in chocolate mixture, nuts, flour, and liqueur, if desired. Pour the batter onto a baking sheet lined with baking paper and spread evenly. Bake in the oven on the middle rack for 8-10 minutes. The batter should no longer be runny, but it shouldn’t be completely baked through either. The best way to check this is to insert a wooden skewer (e.g., a toothpick). When no more batter sticks to the cake, the diamonds are done. Remove from the oven, scatter the pistachios on top, pressing them down lightly, and cut the cake into diamonds.
