Oven-baked vegetables with rack of lamb from the air fryer

Ingredients for 2 servings:

  • ½ bell pepper(s)
  • ½ zucchini
  • 3 mushrooms
  • 5 triplets
  • 1 onion(s)
  • 2 garlic cloves
  • 5 rack of lamb, marinated
  • 1 tbsp olive oil
  • 1 tsp seasoning mix, e.g. Italian Allrounder, or similar

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 22 minutes; Total time approx. 2 hours 32 minutes

Cut the vegetables and new potatoes into fairly small pieces. Dice the onion and garlic cloves. Marinate in olive oil and the spice mix for two hours. Then pre-cook the vegetables in the air fryer for 15 minutes at 170°C. Place the marinated lamb racks (homemade or purchased) on a wire rack and fry for 7 minutes at 180°C.
