Ingredients for 4 servings:

  • 750 g potatoes, waxy
  • 50 g smoked bacon
  • 1 bunch of spring onions
  • 2 tomatoes
  • 200 g mushrooms
  • 3 sausages (grilled sausages)
  • 2 tbsp oil
  • 1 cup sour cream
  • salt and pepper
  • Thyme

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Boil, peel, and slice the potatoes. Cut the bacon into strips and fry in the pan. Set aside. Cut the spring onions and tomatoes into fairly large pieces. Clean and halve the mushrooms (canned mushrooms will also work). Slice the grilled sausages and fry in the bacon fat until golden brown, turning occasionally. Add the spring onions and fry for about 3 minutes. Season with salt and pepper and remove from the pan. Keep warm. Heat the oil in the pan and fry the potatoes and mushrooms for about 10 minutes, turning occasionally. Add the sausages, spring onions, and tomatoes and cook for another 5 minutes. Season again with salt and pepper, if desired. Serve the potato pan either with sour cream and thyme, or serve it plain with the sour cream and thyme on the side. A brilliant combination of warm food and cold ingredients. Simply delicious.
