Christmas red cabbage

Ingredients for 4 servings:

  • 500 g red cabbage
  • 1 onion(s)
  • 0.2 liters of orange juice
  • 0.4 liters of dry red wine
  • 2 tbsp port wine
  • 10 juniper berries
  • 3 carnations
  • 10 peppercorns
  • 1 cinnamon stick(s)
  • 1 bay leaf
  • 2 tbsp goose fat

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 1 hour; Total time approx. 1 day 1 hour 30 minutes

Cut the trimmed red cabbage and peeled onion into strips and place in a bowl. Place the spices in a tea bag or tea strainer. Bring the orange juice, red wine, and port wine to a boil in a saucepan with the spice bag for about 1-2 minutes. Pour over the cabbage and let cool slightly. Cover the cabbage and marinate in the refrigerator for 1 day. The next day, simmer the cabbage with the stock and spices in goose fat for about 1 hour.
