Ingredients for 4 servings:
- 4 artichokes
- 5 onions
- 4 garlic cloves
- 350 ml olive oil
- ½ bunch parsley
- 1 handful of chives
- salt and pepper

Wash the artichokes, dry them with kitchen paper, and remove the stems so the bottom of the artichoke is flat. Next, prepare the filling. Dice the onions and garlic and place them in a bowl. Add the chopped parsley and chives and about 50 ml of olive oil. Add about 1 teaspoon of salt and a little pepper and mix everything well. Let everything rest for 10 minutes and then season to taste. The filling should have a salty flavor. Take 50 cm of aluminum foil and place an artichoke in the center of the foil. Now fill the artichoke. Stuff some of the filling into each artichoke leaf, starting from the outside in. Once the artichoke is completely stuffed, drizzle with olive oil (about 75 ml) from the top. If you like cheese, you can also sprinkle Parmesan cheese on top. Now wrap the artichoke in the aluminum foil. You will need two layers of aluminum foil. Now place the artichokes in the oven at 200°C (grill top/bottom heat) on the middle rack for 90 minutes. Serve the artichokes in the foil on a plate, leaving the foil intact and opening them at the table. This way, the “sauce” stays at the bottom of the foil. White bread or baguette goes well with this. We recommend dipping the white bread into the liquid (created by the olive oil).
