Ingredients for 1 servings:

  • 50 g cornstarch
  • 200 g flour
  • 1 egg(s)
  • 75 g sugar
  • ½ lemon(s), untreated, zest
  • 1 tbsp rum
  • 150 g butter
  • jam
  • powdered sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Knead cornstarch, flour, egg, sugar, lemon zest, rum, and butter into a dough. Refrigerate the dough for one hour. Roll out the dough and cut out circles, cutting out a smaller circle in the middle halfway through. Bake the cookies at 220°C for about 8 minutes. After cooling, spread jam on one half of the cookies (without the cut-out center circle) and cover with the other half of the cookies (which have a hole in the center). Finally, sprinkle the cookies with powdered sugar.
