Ingredients for 40 servings:

  • 150 g flour
  • 1 tsp baking powder
  • 150 g cheese (grated Emmental)
  • some salt
  • 1 tbsp sour cream
  • 150 g butter
  • 1 egg(s), for brushing

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Mix the flour and baking powder and sift onto a pastry board. Make a well in the center. Add the Emmental cheese, salt, and cream and mix with some of the flour to form a thick paste. Add the cold butter, cut into pieces, cover with flour, and quickly knead everything from the center outwards into a smooth dough. Chill for 1 hour. Roll out the dough to a thickness of 5 mm, cut out discs using a cookie cutter (approx. 4 cm in diameter), brush with egg, sprinkle with salt and caraway seeds, or grated cheese, and place on a baking tray lined with baking paper. Place the tray in the center of the oven and bake at a moderate heat (approx. 160°C) for 10-15 minutes.
