Ingredients for 1 servings:

  • 3 cups flour
  • 2 cups sugar
  • 1 cup mineral water
  • 1 cup oil
  • 4 eggs
  • 1 packet of baking powder
  • 1 packet of vanilla sugar
  • 1 kg of fruit (plums or damsons or apricots)
  • some powdered sugar for sprinkling

Working time approx. 20 minutes; Total time approx. 20 minutes

The cup you use holds about 250 ml. Wash, pit, and halve the fruit. Make a batter with the remaining ingredients. Spread half of it on a prepared baking sheet and arrange the fruit on top. Then pour the other half of the batter over the batter. My gas oven takes about 50 minutes at mark 3; otherwise, bake at 180°C for about 50 minutes, until the cake is a lovely golden brown. Sprinkle some powdered sugar on top – delicious! I always bake the cake on a baking sheet, but you could probably also make it in a springform pan.
