Tahini almond cookies from Israel

Ingredients for 1 servings:

  • 140 g flour
  • 140 g whole wheat flour
  • 70 g ground almonds
  • 150 g butter, salted, cut into cubes, cold
  • 150 g sugar
  • 1 tsp vanilla extract
  • 1 pinch of salt
  • 2 tsp water
  • 200 g sesame paste (tahini)

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

simple, crumbly and very tasty

Preheat the oven to 175°C (top/bottom heat). Line two baking sheets with parchment paper. Mix all ingredients except the water and tahini until a crumbly dough forms. Now add the tahini and water. The dough shouldn’t feel too dry; if it does, knead it with wet hands. Form the dough into small balls and place them on the baking sheet. Gently flatten each ball with your fingers. Bake for 12-14 minutes.
