Ingredients for 4 servings:

  • 100 g sugar
  • 125 g butter
  • 250 g flour
  • 1 packet of vanilla sugar
  • 2 egg yolks
  • 2 egg whites
  • 125 g sugar
  • 175 g nuts, ground
  • Egg yolk, for brushing

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

For the dough, combine flour, sugar, butter, egg yolks, and vanilla sugar into a stiff dough. For the filling, beat the two egg whites and the sugar until stiff, then mix or fold in the ground nuts with the egg whites. Roll out the dough and cut out circles using a cookie cutter or a glass. Place about a teaspoon of the filling into the center of each circle. Press the edges of the dough together to form a triangular “hat,” sealing in most of the filling. Optionally, brush the cookies with egg yolk. Bake at approximately 180°C on the middle rack for about 15-20 minutes; they will firm up a bit as they cool.
