Ingredients for 1 servings:
- 2 cups wholemeal spelt flour
- 1 tsp, leveled baking powder
- 1 pinch of salt
- ¾ cup coconut blossom sugar
- ½ cup oil, margarine or butter
- e.g. vanilla
- Water, lukewarm
- 1 cup almonds, sliced

Mix together the flour, baking powder, salt, coconut blossom sugar, and a little vanilla if desired. First, stir in the oil and then add lukewarm water a little at a time until you have a tough dough that sticks to a spoon. Finally, stir in the almonds. Use a spoon to place dollops of dough onto a baking sheet. Experience has shown that the cookies turn out nice and even if you gently poke them wider with a clean finger. Be careful, the cookies will rise in the oven! Bake in a preheated oven at 180°C (top/bottom heat) on the middle rack for 13-15 minutes. When the edges turn a light brown color, the cookies can be removed from the oven.
