Ingredients for 1 servings:

  • 150 g sugar
  • 2 eggs
  • 2 tsp baking powder
  • 200 g flour
  • 1 ½ tsp cinnamon
  • 2 apples, sour, e.g. Boskop
  • 130 g butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

quick and easy

Grease a 12-hole muffin tin or line with paper baking cups. Melt the butter and let it cool. Then beat it with 140g sugar, 1/2 teaspoon cinnamon, and the eggs until light and fluffy. Mix the flour with the baking powder. Dice an apple and fold both into the mixture with a wooden spoon. Pour the batter into the muffin tins. Dice the second apple and spread it over the batter in the muffin tins. Mix the remaining sugar with 1 teaspoon cinnamon and sprinkle over the muffins. Bake the muffins for about 25 minutes at 160°C (convection oven). If you like, you can dust the muffins with powdered sugar before serving.
