Coconut macaroons with marzipan

Ingredients for 1 servings:

  • 5 egg whites
  • 1 pinch of salt
  • 250 g sugar
  • 300 g marzipan paste
  • 250 g desiccated coconut
  • 2 tbsp rum
  • 1 tbsp lemon juice

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Line a baking sheet with parchment paper. Beat egg whites and salt until very stiff peaks form. Add the sugar in portions and continue stirring. Add the marzipan mixture and continue stirring until completely dissolved. Add the coconut flakes, rum, and lemon juice. Scoop the mixture with two teaspoons, place it on the prepared baking sheet, and bake. If you like, you can also place the mounds on baking sheets and then bake. Fan oven temperature: 140-150°C. Baking time: approx. 15-20 minutes.
