Ingredients for 1 servings:
- 150 g powdered sugar
- 2 large eggs
- 1 pinch of salt
- 1 packet of vanilla sugar
- 150 g flour, type 405
- 1 tsp anise, ground
- Butter and flour for the baking tray
Instructions

Very simple, makes about 60 cookies
Grease 2 baking sheets with butter and dust with flour. Beat the eggs with sifted powdered sugar, salt, and vanilla sugar (preferably with an electric mixer) in a double boiler over medium heat until frothy. Remove the mixture from the boiler and stir again when cold. Fold the sifted flour and anise into the foam mixture. Fill the batter into a piping bag fitted with a perforated nozzle and pipe round cookies with a diameter of 2.5 cm onto the baking sheets. Let the cookies dry for 12 hours at room temperature. Preheat the oven to 140°C (120°C fan-assisted oven). Bake the cookies on the middle rack for 20-30 minutes. They are done when they begin to brown slightly on the underside, but the tops are still almost white. Then let them cool completely on a wire rack.
