Healthy carrot and apple cookies

Ingredients for 1 servings:

  • 2 bananas, ripe
  • 2 small apples
  • 2 small carrots
  • 150 g oat flakes
  • 80 g raisins
  • 3 tbsp maple syrup
  • ½ tsp cinnamon
  • 1 tbsp almond butter or peanut butter
  • 1 tbsp coconut oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

vegan, sugar-free, flour-free

Preheat oven to 200°C (top/bottom heat). Line a baking sheet with baking paper or grease it (Note: Not visible in the video). Mash the bananas in a bowl with a fork. Wash the apples and carrots and grate them not too finely. Add them to the bowl with the banana. Add the oats, raisins, maple syrup, and cinnamon. Add the nut butter and coconut oil and mix all the ingredients well with a wooden spoon or spatula. Tip: If the nut butter and coconut oil are very solid, warm them slightly before adding them so that the ingredients combine well. Spoon the dough into portions onto a prepared baking sheet using a tablespoon or ice cream scoop. Bake the cookies in the preheated oven on the middle rack for about 30 minutes until golden brown. Remove from the oven and let cool on a wire rack.
