Almond coffee cookies

Ingredients for 1 servings:

  • 3 egg whites
  • 100 g sugar
  • 300 g almonds, chopped
  • 50 g flour
  • 4 tbsp coffee, very strong
  • 100 g dark chocolate
  • 100 g white chocolate
  • 1 pack of mocha beans (chocolate decoration)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

with 3 types of chocolate, for approx. 28 pieces

Beat the egg whites until stiff, gradually incorporating the sugar. Add the chopped almonds and flour, then the coffee. Grate the dark chocolate and fold it into the mixture. Line baking sheets with parchment paper and place small mounds of the mixture on them. I use a macaron maker for this, which makes 28 cookies. Bake the cookies for about 20 minutes at 175°C (top/bottom heat). Let cool slightly on a wire rack. Meanwhile, melt the white chocolate in a double boiler. Using a teaspoon, drop a dollop onto each cookie, then place the third chocolate—the mocha bean—on top.
