Apple and curd cream cake

Ingredients for 6 servings:

  • 3 eggs
  • 125 g sugar
  • 125 g flour
  • 1 tsp, leveled baking powder
  • 3 tbsp mineral water
  • 500 g low-fat curd cheese
  • 1 cup of cream
  • 4 apples
  • 2 packets of vanilla sugar

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 45 minutes

Mix all the ingredients for the sponge cake base, pour into a springform pan, and bake at 200°C for 20 minutes. Remove the base and let it cool. While the cake is baking, you can prepare the topping. To do this, whip the cream with 2 sachets of vanilla sugar until stiff peaks form and set aside briefly. Then, whisk the quark with a little milk until smooth, add the stiffly whipped cream, and mix well. Finally, peel the apples and grate them into the quark and cream mixture. Sweeten with sugar to taste. Return the cooled base to the springform pan, spread the quark and cream mixture over the base, and then refrigerate for 2 hours.
