Schupfnudeln – super quick and hearty-tasty

Ingredients for 2 servings:

  • 500 g Schupfnudeln, ready-made/refrigerated
  • 150 g smoked bacon, diced
  • 1 tbsp butter
  • 2 m.-large shallot(s), finely diced
  • 2 tbsp pesto, parsley, with a twist (my recipe at CK)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

the quick meal or side dish

Heat a large enough pan. Cut the smoked bacon into small cubes. Peel the shallots and finely dice them. First, fry the bacon over medium heat. Fry the dumplings for about 2 minutes. Then add the butter and onions and toss well several times. When everything is nice and crispy (the dumplings have taken on some color), stir in the parsley pesto and toss everything well again (until the dumplings have taken on a green color all over from the pesto). Done – serve immediately! The quantity given here is for one meal. Served as a side dish, it will double the serving size.
