Ingredients for 1 servings:
- 300 g flour
- 200 g butter
- 100 g sugar
- 1 egg(s)
- 1 packet of vanilla sugar
- 1 tsp lemon(s), grated peel
- 500 g apples (e.g. Boskoop)
- 1 egg(s), separated
- Sugar
- possibly cinnamon – sugar

Crumbly and moist apple cookies. Kids and adults alike love them. Makes about 30 cookies.
Make a shortcrust pastry from flour, butter, sugar, vanilla sugar, lemon zest, and egg and chill for at least 30 minutes. In the meantime, peel and core the apples, and cut them into eighths. Roll out the pastry to about the thickness of a knife’s back and cut out circles using a drinking glass. Top each circle with an apple slice. Sprinkle a little sugar and cinnamon on top if desired. Brush the edges of the pastry with egg white and fold the circles together in the middle. Press the edges firmly to form a small half-moon. Repeat the process with the remaining pastry and apples. Then, using a sharp knife, lightly score the tops of the moons, brush with egg yolk, and sprinkle with sugar. Place on a baking sheet lined with baking paper and bake on the middle rack of a preheated oven at 190°C for about 45 minutes. The apple moons are delicious hot or cold.
