Ingredients for 1 servings:
- 250 g flour
- 250 g butter
- 250 g quark, possibly low-fat quark
- 1 pinch of salt
- 1 egg(s) for brushing
- maybe jam or Nutella…
- maybe ham or cheese or bacon…
- possibly fruits of your choice
- possibly powdered sugar for dusting

Working time approx. 50 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours 10 minutes
Quark dough for croissants, pinwheels, filled pockets…
Quickly knead the first four ingredients into a dough and refrigerate for at least two hours. The longer it stays in the fridge, the better it will be! This can be 1-2 days! Then roll out to a thickness of 2-3 mm. Cut into triangles, squares, etc., fill as desired, and shape into croissants, pockets, pinwheels, etc. Brush with beaten egg. Let rest for 15 minutes, then bake at 180°C fan oven (preheat) for about 20 minutes. This can vary depending on the oven. When they are golden brown, they are perfect! Remove from the oven, let cool, and if they have a sweet filling, sprinkle with powdered sugar! I can also imagine a savory version—but I haven’t tried it yet! We tend to prefer sweeter things.
