Ingredients for 1 servings:
- 250 g butter
- 4 eggs, size M
- 125 g sugar
- 100 g flour
- 1 pack of vanilla flavor, liquid
- 1 pack of lemon zest
- 500 g oat flakes, wholegrain
- 200 g walnuts, chopped
- 200 g cranberries, dried

Beat the softened butter with the sugar until very fluffy, then gradually add one egg at a time. Continue beating the mixture, add the vanilla extract and lemon zest, and then stir in the flour. Gradually stir the oats into the mixture, then fold in the walnuts and cranberries. Place small heaps of cookies on a baking sheet lined with baking paper and lightly flatten them with a fork. The above ingredients will make about 70 cookies (= 2 to 3 baking sheets). Bake the cookies at 180°C (top/bottom heat) for about 12-15 minutes. They are done when they are light brown. The second and third baking sheets usually take less time—just check after 10 minutes. Cool the cookies thoroughly on a wire rack, then store in a cookie tin. Instead of cranberries, the cookies can also be made with other dried fruits (chopped!), or without chopped walnuts.
