Ingredients for 1 servings:
- 3 eggs
- 125 g brown sugar
- 1 tbsp cocoa powder
- 30 g candied lemon
- 1 tsp cinnamon
- 5 g ammonium bicarbonate
- 250 g sugar, coarse (preserving sugar)
- 500 g flour
- ½ tsp all-spice
- ½ tsp pepper
- ½ tsp clove(s)
- ½ tsp cardamom

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Beat eggs and brown sugar until frothy. Knead in the remaining ingredients. Roll out the dough, not too thinly, and cut out small round cookies. Place on a baking sheet lined with baking paper and brush lightly with water. Bake in a preheated oven at 200 degrees Celsius for about 10 minutes. Makes 3 baking sheets.
