Vanilla cookies with chocolate pieces

Ingredients for 1 servings:

  • 100 g dark chocolate coating
  • 100 g chocolate coating, whole milk
  • 100 g butter, soft
  • 50 g sugar
  • 1 packet of vanilla sugar
  • 90 g brown sugar
  • 1 vanilla pod(s)
  • 1 egg(s)
  • 100 g flour
  • 75 g hazelnuts, ground
  • 1 tsp, leveled baking powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat the oven to 180°C. Roughly chop the milk chocolate and 50g of the dark chocolate. Cream the butter with the sugars until very light and fluffy. Stir in the vanilla bean pulp and the egg. Mix the flour with the ground hazelnuts and the baking powder, then stir into the egg mixture. Melt about 1/5 of the chopped chocolate in the microwave and stir into the egg mixture. Fold in the rest of the chopped chocolate. Line a baking tray with baking paper. Use two teaspoons to scoop out small portions of the dough and place them on the tray, leaving about 10-12 cookies apart. Press them down slightly and smooth the edges. (Don’t worry if they’re not as round due to their sticky consistency.) Chop the remaining 50g of dark chocolate into pieces and sprinkle over the dough portions. If desired, sprinkle with freshly ground sugar. Smooth the edges again with another teaspoon. Bake the cookies on the middle rack for 10 minutes. Then remove and let rest for 10 minutes.
