Ingredients for 1 servings:
- 100 g butter
- 1 egg(s)
- 200 g carrot(s), finely grated
- 50 g nuts (mixed nuts)
- 100 g raisins
- 150 g flour (wholemeal flour)
- ½ tsp baking powder
- 3 tsp gingerbread spice
- 100 g oat flakes
- 120 ml buttermilk
- Sweetener, liquid

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Preheat the oven to 180°C. Combine softened butter, a little sweetener, and egg. Add the carrots, nuts, and raisins. Combine the dry ingredients in a second bowl and add them to the oats and buttermilk. Mix well. Place a spoonful onto a baking sheet lined with parchment paper and flatten with a fork. Bake for 15 minutes, then turn over and bake for another 5 minutes. They will keep in an airtight container for up to a week.
